Veg Out at Canmore’s Newest Micro-Juicery

Keili Bartlett September 7, 2017

Moving to Canmore inspired Gillian Shepherd to get healthier.

Thirty pounds later, with more energy and new certification as a raw food chef, she opened Toniq.

What started as a personal 30-day juice cleanse became making fresh juice for friends, then attending a raw food certification class and eventually opening a business. Shepherd’s juice cleanse truly changed her life, and now she wants to share her newfound energy and local produce creations with the community.

“I’m trying to buy as much local produce as possible,” says Shepherd. Without preservatives, her beverages last for six days, with an added goal of creating zero waste. One way they combat excess waste is by complementing their fresh drinks with food made from juice by-products (her zucchini noodles are a favourite!)

Shepherd notes that her green juices are a great way to get kids (her own included) to eat their veggies.
