Renovated and Refined Rundle Bar

The Fairmont Banff Springs has a new elegant space with their recently renovated Rundle Bar.

Formerly the Rundle Lounge, this space features a stunning new interior designed by the female-led design firm Frank Architecture. An updated pan-Asian menu is accompanied by fun and creative cocktails, specifically designed to accent the new-and-improved space.

So what can you expect in this new and improved space? Well, like everything at the iconic Castle in the Rockies, the Rundle Bar is an elegant space with top-notch service, finely crafted food and some of the best mountain views available. The upstairs bar features large windows above the Lookout Terrace and the stunning mountain vistas beyond. Watch the Bow River meander through the Canadian Rockies while you sip a signature cocktail, made with spirits crafted specifically for Rundle Bar.

The new featured cocktails include the Spirit Animal, with hibiscus-infused Wild Life Vodka, cointreau, orange bitters, simple syrup, rose water and Trius Brut. The drink has a brilliant pink colour and a garnish of homemade cotton candy that will surely bring a smile to your face. With its playful sugary topper, this drink is sweet enough to go down smoothly, without being so sweet that it overpower the flavours of the ingredients.

The Wild Flower uses Wild Life Rundle Bar gin, a specialty spirit distilled specifically for the Rundle Bar. This bright purple cocktail is fun and playful and packs some serious flavour. The exclusive gin is smooth, delicious and every bit the quality that you’d expect from local Wild Life Distillery.

For a bit of added fun, the Monkey Gone to Heaven comes in a cup shaped like an Easter Island Head! The combination of coconut milk, housemade pineapple cordial, blueberry puree, orange juice and lime juice give the taste of a tropical getaway, right here in the Canadian Rockies.

The Asian-inspired menu is a delightful mixture of tapas and larger plates. It’s designed to share, and to enjoy with your table. The dishes feature everything from rolls to dumplings and have a variety of fresh, quality ingredients. We recommend the Pork Dumplings, Pacific Crab Roll and Banh Mi Bao Buns to enjoy with your fun and fresh cocktails.
