1888 Chop House pays homage to the beginnings of the Banff Springs, and tourism in the Rockies.

On June 1st, 1888, the Banff Springs Hotel, then owned by Canadian Pacific Railway, opened its doors and welcomed its first guest. On February 2, 2019, 1888 Chop House won the Silver Service Award from Les Clefs d’Or.

Executive Chef Robert Ash comments, “An award like this is so meaningful for us because it helps bring awareness to the culinary experiences available in an unexpected location like a grand railway hotel.”

“For a long time, it was hard to find a restaurant offering the very best Alberta beef in the heart of Banff,” says Don Mooney, Guest Relations Manager, VIP Concierge and National Vice President of Les Clefs d’Or. “1888 Chop House changed this town. 1888 Chop House is a modern interpretation of an authentic chop house, set in the heart of the Castle in the Rockies. They are committed to working with small farmers who provide the very best in ethical and sustainable products. This ensures their food is always fresh and flavourful while delivering an authentic taste of place. “Seasonal ingredients, prepared with care and simplicity, showcase the quality of the product,” says Ash. “We know the full story from seed to salad. We also know the people who work so hard to bring these delightful ingredients to our kitchens.”

In addition to locally sourced, sustainable farms, 1888 Chop House has its own greenhouse. The culinary team tends to fresh microgreens, which are served in the restaurant. “It’s a great learning tool for our culinary apprentices,” says Ash.

More than extraordinary food, 1888 Chop House offers an exceptional wine list, with expert pairings for each meal. There are over 750 labels including rare finds and older vintages. They have won a Wine Spectator Award for the past three years in a row. “Not only do they have an extensive wine list,” says Mooney, “The service and knowledge of wines is definitely something else.”

Mooney recounts a story where two VIP guests requested a specific bottle of wine. The sommelier recommended something that was similar in terms of tone and flavour, but that perfectly complemented the chosen meal. “Now it’s their favourite wine!” says Mooney. “It’s not just the great steaks, or the great bar, but it’s also the extensive knowledge and service that goes along with the food.”
